Twice Baked Potato Casserole

Heirloom Tomato Bruschetta


Ingredients

  • 24 oz. heirloom cherry, pear and grape tomatoes
  • 1-2 avocados
  • ½ cup chopped basil leaves
  • 2 cloves garlic, minced
  • 2 Tbsp. TRK Shallots
  • 1 tsp. balsamic vinegar
  • ½ tsp. salt, plus more to taste
  • ¼ tsp. TRK Coarse Ground Black Pepper
  • 2 Tbsp. olive oil

Preparation

Cut tomatoes into halves and avocado into chunks and place in large bowl. Add remaining ingredients, except olive oil, to tomatoes and gently stir to combine. Add olive oil, gently stirring again until incorporated. Cover and chill for at least 1 hour. Serve with slices of fresh French baguette..
