Twice Baked Potato Casserole

Black Bean and Corn Salsa


Ingredients

  • 1 15 oz. can black beans, drained and rinsed
  • 1 11 oz. can corn with peppers added, drained
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 1 Tbsp. TRK Coriander Lime Global Fusion Rub
  • 1 Tbsp. lime juice

Preparation

Combine all ingredients and chill for at least 30 minutes before serving. Serve with tortilla chips, as a topping for grilled fish or chicken, or as a side dish. .
