Twice Baked Potato Casserole

Basil Pesto


Ingredients

  • ½ cup packed basil leaves
  • 1 Tbsp. TRK California Parsley
  • 1 tsp. minced garlic
  • 1 Tbsp. TRK Pine Nuts
  • 1 Tbsp. grated Parmesan cheese
  • 2 Tbsp. olive oil
  • Salt to taste, if desired

Preparation

In a food processor or with an immersion blender, puree basil, parsley, and garlic with pine nuts and Parmesan cheese. While blending, drizzle in the oil until incorporated. Salt to taste, if desired. Toss with eight ounces of pasta, cooked as stated on package and enjoy!.
