Twice Baked Potato Casserole

Poppy Seed Red Cake


Ingredients

  • ½ cup TRK Dutch Poppy Seeds
  • ½ cup milk
  • 1 cup butter
  • 1½ cups sugar
  • 2 eggs
  • 2 oz. red food coloring
  • 2½ cups cake flour coloring
  • 2 tsp. cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup buttermilk
  • 1 Tbsp. white vinegar
  • 1 tsp. TRK Pure Vanilla Extract

Preparation

Bring poppy seeds and milk to boil. Remove, let stand 1 hour. Pour off milk. Bring all ingredients to room temperature. Cream butter and sugar, about 10 minutes. Beat in eggs and food coloring. Sift dry ingredients together. Alternately add buttermilk and dry ingredients to butter mixture. Add poppy mixture, vinegar and vanilla. Pour into 2 greased and floured 9 inch round cake pans. Bake in preheated 350°F oven for 30-35 min. If desired, top with your favorite vanilla frosting. .
