Twice Baked Potato Casserole

Onion Cornbread with Cheddar Cheese


Ingredients

  • 2 cups buttermilk
  • 1 (15 oz.) can cream-style corn
  • 1½ cups yellow cornmeal
  • ¾ cup all purpose flour
  • 1 small onion, diced
  • ½ cup cheddar cheese, shredded
  • 2 Tbsp. sugar
  • 1½ tsp. baking powder
  • 1½ tsp. salt
  • ½ tsp. TRK Crushed Red Chile Pepper
  • ¼ tsp. baking soda
  • 1 tsp. TRK Chopped Chives

Preparation

Combine all ingredients in a large bowl. Pour into an 8-inch square baking dish, bake at 450°F for 25 minutes. Let cool and enjoy!.
