Twice Baked Potato Casserole

Citrus Glazed Basil Cake


Ingredients

  • 1 cup butter, softened
  • 2¼ cups sugar
  • 1 tsp. TRK Pure Lemon Extract
  • 5 eggs
  • 2¼ cups flour
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • ¾ cup sour cream
  • 1 Tbsp. TRK California Basil Leaves or 100% Organic Basil
  • 1 cup orange juice
  • ½ cup sugar

Preparation

Preheat oven to 350°F. Grease and flour a fluted cake pan. In a large bowl, beat butter, sugar and lemon together until well blended. Beat eggs into sugar mixture one egg at a time. Sift together the flour, baking soda and salt, then mix into sugar mixture. Stir in sour cream, then pour batter into prepared pan. Bake for 1 hour 10 minutes or until a toothpick inserted in the middle comes out clean. Remove pan from oven and let sit for 10 minutes before inverting cake onto a plate. While cake is baking, prepare glaze. Bring orange juice to a boil in a small saucepan, reduce heat and simmer for 15 minutes or until volume is reduced by half. Add sugar, return to a simmer and cook another 5 minutes. Remove from heat and let cool to room temperature. Brush glaze over warm cake and let cool before serving..
