Twice Baked Potato Casserole

Carrot & Apple Oat Muffins


Ingredients

  • 1 1/3 cups all purpose flour
  • 1 cup rolled oats
  • ½ cup white sugar
  • ¼ cup packed dark brown sugar
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. TRK Highland Harvested Saigon Cinnamon or 100% Organic Cinnamon
  • ¼ tsp. TRK East/West Indies Ground Nutmeg
  • ¼ tsp. salt
  • 1 cup finely grated carrots
  • 1 cup coarsely grated apple
  • 2 eggs
  • ½ cup vegetable oil
  • ½ tsp. TRK Pure Madagascar Vanilla Extract

Preparation

Preheat oven to 350°F. Combine flour, oats, sugar, baking soda, baking powder, spices and salt together in a large bowl. Mix in carrots and apples. In a small bowl, combine eggs, oil and vanilla extract, then stir into dry mixture. Divide batter into 12 lined muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean..
