
Carrot & Apple Oat Muffins
Ingredients
- 1 1/3 cups all purpose flour
- 1 cup rolled oats
- ½ cup white sugar
- ¼ cup packed dark brown sugar
- ½ tsp. baking soda
- 1 tsp. baking powder
- 2 tsp. TRK Highland Harvested Saigon Cinnamon or 100% Organic Cinnamon
- ¼ tsp. TRK East/West Indies Ground Nutmeg
- ¼ tsp. salt
- 1 cup finely grated carrots
- 1 cup coarsely grated apple
- 2 eggs
- ½ cup vegetable oil
- ½ tsp. TRK Pure Madagascar Vanilla Extract
Preparation
Preheat oven to 350°F. Combine flour, oats, sugar, baking soda, baking powder, spices and salt together in a large bowl. Mix in carrots and apples. In a small bowl, combine eggs, oil and vanilla extract, then stir into dry mixture. Divide batter into 12 lined muffin cups. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean..
