Twice Baked Potato Casserole

Spicy Garlic Focaccia


Ingredients

  • 1 cup water
  • 1 package active dry yeast
  • 1 tsp. sugar
  • 1 ½ tsp. coarse ground TRK Salt Free Spicy Garlic Organic Grinder
  • 1 ¼ tsp. salt
  • 3 Tbsp. olive oil, plus more for oiling bowl & pan
  • 2 ¾ cups bread flour, plus more for dusting
  • ½ cup shredded mozzarella cheese
  • 1 Tbsp. grated parmesan cheese

Preparation

Heat water to about 110°F; add yeast and sugar, stirring gently and let sit for about 10 minutes or until mixture is foamy. Pour yeast mixture, spice, salt and 1 Tbsp. of oil into a large bowl. Add flour, stirring to combine. Place dough on a lightly floured surface and knead until smooth. Oil a large bowl, place dough in bowl, turning to coat lightly with oil. Cover with a damp cloth and let rise for about 20 minutes. Heat oven to 450°F. Form dough into a ½ inch thick rectangle on a greased baking sheet. Make indentations with your fingertips about ½ inch apart all over dough. Brush with remaining 2 Tbsp. olive oil. Sprinkle cheeses over top of dough and bake until deep golden brown and bubbly, about 15 minutes..
