Twice Baked Potato Casserole

Roasted Mole Pepitas (Pumpkin Seeds)


Ingredients

  • 1 lb. raw pepitas (pumpkin seeds)
  • 1 egg white
  • 1 Tbsp. sugar
  • 3 Tbsp. TRK Smoky Chile Global Fusion Rub
  • ½ tsp. salt

Preparation

Preheat oven to 325°F. Beat egg white in a large bowl until frothy; mix in nuts. Combine sugar, rub and salt, then toss with nuts to coat. Pour onto two greased or lined baking sheets, spreading into a single layer. Bake for 15 minutes, stirring halfway through. Let cool and serve or store in a sealed container..
