Mini Crustless Mushroom Quiches


Ingredients

  • 1 medium onion, finely diced
  • 1 (8oz) package crimini mushrooms, diced
  • ½ Tbsp. butter
  • 1 ½ cups cheese, such as Swiss, Gruyere, Cheddar
  • 6 eggs
  • 1 cup milk
  • ¾ tsp. coarse ground TRK Salt Free Black & White Pepper Organic Grinder
  • ¼ tsp. salt
  • 2 Tbsp. TRK 100% Organic Parsley

Preparation

Preheat oven to 375°F. Grease a mini muffin pan and set aside. Sauté onion and mushrooms in butter over medium heat until softened. Scoop 1 tablespoon of onion and mushroom mixture and 1 tablespoon of cheese into each muffin cup. Whisk together eggs, milk, pepper, salt and parsley in a medium bowl. Carefully pour egg mixture into each muffin cup. Bake for 15 to 20 minutes or until set (a knife inserted should come out clean)..
