Twice Baked Potato Casserole

Mediterranean White Bean Hummus


Ingredients

  • 1 (15oz) can white beans, such as cannellini, drained
  • 1 Tbsp. lemon juice
  • 2 tsp. olive oil
  • 1 tsp. TRK California Granulated Garlic or 100% Organic Granulated Garlic
  • 1 ½ tsp. TRK California Basil Leaves or 100% Organic Basil Leaves
  • pinch of TRK Coarse Black Pepper or 100% Organic Coarse Black Pepper
  • pinch of salt (if desired)
  • 1 Tbsp. chopped sundried tomatoes in oil
  • 2 tsp. chopped black olives

Preparation

Combine all ingredients, except tomatoes and olives, in a food processor and blend until smooth. If mixture is too thick, blend in a tablespoon of water. Spoon mixture into a bowl, then mix in tomatoes and olives. Refrigerate for at least 1 hour before serving..
